TODAY feels like a good time to cool our jets on the manic bread/cookie/cake baking, and bring back something easy and light—something that gives my kitchen and our bodies a much needed refresh. Enter: cooling drinks. Smoothies. Shrubs. Refreshers, if you will.

Our seven summery favorites, from a Raspberry Shrub to a Frothed Saffron Lassi (soo good!), are in my book, but I’m sharing the three we make most often with you here, because, well, quarantine. We start most days with my Every Day Green Juice (green and clean), this week we’re hot on Pineapple Agua Frescas (trust me: buy a few pineapples this week) and our go-to Raw Cocoa Honey Anytime Shake is life-giving on a warm weekday afternoon (when you need a milkshake but you know that’s not what’s best for your body, for whatever reason…).

The bonus for here, of course, is that any one of these, and the four others in my book, double as excellent DIY popsicles (a how-to, below). Pop them in molds and freeze for instant, repeatable, guilt-free fun. xx

PINEAPPLE AGUA FRESCA (SERVES 2 TO 4)*

1/2 VERY RIPE PINEAPPLE

1 TO 2 TEASPOONS SUGAR (OPTIONAL)

ABOUT 1/2 CUP ICE CUBES

1 CUP WATER

2 TEASPOONS LIME

TRIM THE PINEAPPLE, PEEL, AND CORE IT (AND SAVE THE FIBROUS CORE FOR SMOOTHIES). CHOP THE REMAINDER TO EQUAL ABOUT 3 CUPS. BLEND IN A POWERFUL BLENDER WITH THE ICE, WATER AND LIME UNTIL SMOOTH AND FROTHY. POUR OVER FRESH ICE OR SERVE IN A CHILLED GLASS.

EVERYDAY GREEN JUICE (SERVES 2 TO 4)*

2 LARGE HANDFULS BABY KALE, CHOPPED KALE OR SPINACH

1 BANANA

2 STALKS CELERY

1 TART, JUICY APPLE, CUT IN PIECES (WASHED AND UNPEELED)

2 TO 4 TABLESPOONS FRESH LEMON JUICE

1 INCH PIECE OF FRESH GINGER

3 SCOOPS COLLAGEN

1 CUP ICE

1 CUP WATER OR COCONUT WATER

BLEND EVERYTHING IN A POWERFUL BLENDER UNTIL COMPLETELY SMOOTH AND FROTHY. POUR OVER FRESH ICE OR SERVE IN A CHILLED GLASS.

RAW COCOA-ANYTIME SHAKE (SERVES 2)*

1 LARGE BANANA

1/3 CUP RAW COCOA POWDER

1 TEASPOON RAW COCONUT OIL

1 TABLESPOON RAW HONEY

1 1/4 CUPS WHOLE MILK, ALMOND MILK, OR COCONUT MILK

PINCH FINE SEA SALT

PINCH GROUND CINNAMON

1 CUP ICE CUBES

BLEND EVERYTHING IN A POWERFUL BLENDER UNTIL COMPLETELY SMOOTH AND FROTHY. POUR OVER FRESH ICE OR SERVE IN A CHILLED GLASS.

MAKE POPSICLES

Pour any leftovers into a popsicle mold and freeze overnight before eating. Any one of these full batches will make THREE popsicles, SO double THE batch, for six full sized popsicles.

NO POPSICLE MOLDS?

Dixie Cups lined up on a half-sheet tray (or 9 x 13 pan) outfitted with some popsicle sticks make great popsicle molds. I love these little, perfectly round shapes for afternoon treats.
